2 cups sugar
2 cubes butter (vegan)
1 tsp baking powder
2 cups milk (soymilk or almond)
4 cups flour (unbleached or whole wheat)
4 large eggs (egg substitute like Ener-G Egg-Replacer or Bob’s Red Mill Egg Replacer)
Make dough one day or let set overnite.
Melt butter & cool. Then add eggs and mix well. Add milk and vanilla. Add sugar and mix. Add flour and baking powder a little at a time and mix.
Use Pizzelle iron to cook cookies. Use about ¾ Tablespoon for each cookie. Cooks less than one minute. Remove from Pizzelle iron and roll cookie right away.
