Meatless Loaf


1 cup cooked brown rice
2 cups shredded vegan cheddar cheese or Almond Jalepeno Jack cheese
1 cup wheat germ
1 cup chopped walnuts
1 cup chopped mushrooms
1/2 cup finely chopped green pepper
1 large onion chopped
1/2 cup shredded carrot
4 eggs using egg-replacer equivalency (For example: Egg-Replacer, Instead of Eggs)
2 tablespoons soy sauce (Braggs Amino or reduced-sodium type soy sauce.)
2 tablespoons prepared mustard
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon sage

1/2 – 1 cup Ketchup

1) Preheat oven to 350 degrees. Lightly grease 5” X 9” loaf pan, preferably glass type.
2) In bowl, combine all ingredients to make the loaf, mix well, and firmly pack into oiled
     5” X 9” pan or to your preference.
3) Bake for 55mintues. Spread sauce over baked loaf and bake for another 10 more
      minutes. Let cool for 5 minutes before slicing. Serves: 4-8 depending on the thickness of
      slices desired.
