Roasted Garlic Mashed Potatoes

Brown Jasmine Rice

 2 cups water
 1 tsp butter or oil (optional)
 1 cup rice

Bring 2 cups of water to boil. Add butter or oil (optional). Stir in 1 cup of rice. Reduce heat, cover and simmer for 45 minutes.
Remove from heat and let stand covered for 5 minutes or until water is absorbed. Fluff with fork and serve.
Yields: 2 cups cooked rice
